You may have enjoyed a bite from a Dough Re Mi cookie - a special dough, with a recipe which is a closely kept secret, topped with colourful, often intricate, fondant icing. Dough Re Mi is a local company initially established by a pair of friends with a love of baking. The third important part of this working relationship is 'Bessie' the Mixer who churns out between 65 - 300 kgs of dough a week depending on demand. Year 11 Business and Food Tech had the opportunity to hear about the set up of the business, the marketing and business structure as well as tasting the wares!
